Samantha's Awe Mazing Omelets

INGREDIENTS:

  • 2 large eggs
  • 1 tablespoon water
  • Salt and pepper, to taste
  • 1 tablespoon vegetable oil
  • ½ red pepper, cut into ½” squares
  • 1 green onion (scallion), diced
  • 4 sundried tomatoes, diced
  • 2 to 3 tablespoons goat cheese
  • 4 chives, ½ chopped

STEPS:

  1. In a bowl, crack the eggs and whisk together. Add water, salt and pepper and whisk again.
  2. In a medium non-stick frying pan, warm the oil on medium-high heat. Pour in the eggs and let cook for 2 minutes or until set.
  3. Using a spatula, flip the omelet over in the pan to cook the other side, about 1 minute.
  4. Add the red pepper on top, reduce the heat, and cover the pan to let soften in the heat for 1 minute.
  5. Sprinkle the green onion, sundried tomatoes, and goat cheese on top of the red pepper. After 1 minute, fold the sides of the egg omelet towards the centre so that vegetables are covered. Using a spatula, transfer the omelet to a plate.
  6. Garnish with 2 chopped chives sprinkled over the top and 2 whole crossed chives. Serve immediately and enjoy!
