Fresh Lime Lunch Bowl

INGREDIENTS:

  • FOR THE SALAD:
  • ½ cup rice, preferably brown or wild rice
  • ½ cup quinoa
  • 1 cucumber, peeled and grated
  • ½ avocado, pitted and sliced
  • ½ yellow bell pepper, stems removed, seeded and chopped
  • ½ cup black beans, drained and rinsed
  • 2 medium carrots, peeled and grated
  • 4 lettuce leaves, finely chopped
  • 2 slices fresh lime
  • FOR THE SALAD DRESSING:
  • ¼ cup chopped cilantro
  • 1 garlic clove, peeled
  • Juice of 1-2 limes
  • ¼ cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon of low sodium soy sauce or tamari
  • 1 tablespoon honey
  • Salt and pepper to taste

STEPS:

  1. In two large pots, cook the rice and quinoa according to the manufacturer’s instructions.
  2. Meanwhile, in a large salad bowl, combine the remaining salad ingredients.
  3. In a small bowl, combine the salad dressing ingredients and whisk thoroughly.
  4. Add the rice and quinoa to the salad bowl and mix well. Drizzle salad dressing, mix again and enjoy.
