Almond Blueberry Coconut Banana Bread

  • 1/2 cup almond flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tbsp oil
  • 2 eggs
  • 1/2 cup bananas
  • 1/8 cup maple syrup
  • 1/4 cup chocolate chips
  • A sprinkle of coconut flakes


  1. First, mix all dry ingredients together in a large bowl.
  2. Then mix all wet ingredients together and mash bananas and add.
  3. Then transfer wet ingredients to dry and mix well.
  4. Then transfer to greased baking dish and preheat oven to 350.
  5. Takes 40 minutes to bake and then let stand and after cooling off, enjoy!!


I made a different version of the regular banana bread recipe using almond flour. I replaced regular flour with almond flour and then followed the steps and even added frozen blueberries and coconut flakes to the batter once in the dish. Then I put it in the oven and baked it and it turned out to be a family favourite! Just want to also mention I am gluten free so I use gluten free flour when baking and this time used almond flour which is also gluten free!
